Banana cake

Ingredients

Cake

  • 2 ½ cups self raising flour
  • 1 teaspoon bicarb soda
  • 1 cup castor sugar
  • 4 eggs, lightly beaten
  • 2 ¼ cups mashed banana (approx 5 large ripe bananas)
  • 1 cup oil

Icing

  • 100 grams packaged cream cheese
  • 60 grams butter
  • 1 teaspoon vanilla essence
  • 1 tablespoon apricot jam
  • 2 cups icing sugar

Instructions

Cake

  • grease a 23cm square slab pan, cover base with paper and grease paper
  • sift flour and soda into a bowl
  • make a well in centre of flour mixture
  • stir in sugar, eggs, banana and oil, and mix to a smooth batter
  • pour mixture into prepared pan
  • bake in oven for 1 ½ hours, or until cooked when tested
  • let cake stand in pan for 10 minutes, turn onto wire rack to cool
  • spread icing over cooled cake

Icing

  • beat cheese, butter, essence and jam in a bowl with electric mixer until smooth and creamy
  • gradually beat in sifted icing sugar and beat until light and fluffy
