Lime Butter

Ingredients

  • 175 grams unsalted butter, chopped
  • 2 cups castor sugar
  • ¾ cup lime juice
  • 1 tsp grated lime rind
  • 4 egs, beaten, strained

Instructions

  • Combine all ingredients in top half of a double saucepan, or in a heat proof bowl
  • Stir over simmering water until mixture thickly coats the back of a wooden spoon. (Test consistency of butter by placing a small amount on a cold saucer, refrigerate until spreadable)
  • Pour into hot sterilised jars; seal while hot
